Are there Scriptures I can use to prove God is one, yet three persons? Many people I talk to tell me that there is only one God, one person, and not three. Could you help me out?

There are many different ways we can prove that God is one, but three persons who are all equal in glory and are all God. He is a triune God. Here are some Scriptures that will help you. Let's begin in the book of beginnings:
And God said, Let us make man in our image, after our likeness: and let them have dominion over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth.
So God created man in his own image, in the image of God created he him; male and female created he them.
(Gen. 1:26-27 KJV)
This Scripture refers to God as "Us," and it uses the plural word "Our." We know that the "Us" in this section of Scripture is God, the Father, Jesus, and the Holy Spirit.

In the book of Hebrews, God, the Father, calls Jesus, the Son, God. God declares that Jesus has created the earth and all we see (Heb. 1:8-12). Notice how the following section of Scripture is stated:
In the beginning was the Word (Jesus according to verse 14), and the Word was with God, and the Word was God. He was in the beginning with God. All things were made through Him, and without Him nothing was made that was made.
(John 1:1-3 NKJ)
God, the Father, Jesus, and the Holy Spirit are one with three distinct personalities (1 Tim. 2:5). We will be able to understand this freely when we get to Heaven.
